Description

A warm and comforting dish featuring succulent pork tenderloin infused with apple cider, served alongside creamy mashed sweet potatoes with a hint of cinnamon.


Ingredients

  • Apple cider (1 cup): Sweet and tart.
  • Onion (1 medium): Sliced.
  • Garlic (3 cloves): Minced.
  • Olive oil (2 tablespoons): For searing.
  • Thyme (1 teaspoon): Fresh or dried.
  • Salt and Pepper (to taste): Essential for seasoning.
  • Butter (1 tablespoon): For richness in the sauce.
  • Cornstarch (1 tablespoon): For thickening the sauce (optional).
  • Sweet potatoes (2 large): Peeled and cubed.
  • Butter (2 tablespoons): For the mash.
  • Heavy cream or milk (¼ cup): For a silky texture.
  • Salt (to taste): For the mash.
  • Cinnamon (¼ teaspoon): Optional for the mash.

Instructions

  1. In a bowl, combine the pork medallions, ½ cup of apple cider, minced garlic, thyme, salt, and pepper. Marinate for at least 15-30 minutes.
  2. Meanwhile, bring a large pot of salted water to a boil and add the peeled and cubed sweet potatoes. Cook for about 15-20 minutes, or until fork-tender.
  3. Heat olive oil in your skillet over medium-high heat. Remove the pork from the marinade and sear the medallions for about 3-4 minutes on each side.
  4. In the same skillet, add the sliced onion and sauté for about 3-4 minutes until softened.
  5. Pour in the reserved marinade along with the remaining ½ cup of apple cider and bring it to a gentle simmer.
  6. Return the pork to the skillet, cover, and let it cook through for an additional 10-15 minutes until the internal temperature reaches 145°F (63°C).
  7. Add butter, heavy cream (or milk), salt, and cinnamon to the drained sweet potatoes and mash until smooth.
  8. To serve, plate the mashed sweet potatoes and top with the pork and sauce, garnished with fresh thyme.

Notes

Marinate the pork a day in advance for best flavor. Perfect for cozy dinners or gatherings.
