Instructions
- In a bowl, combine the pork medallions, ½ cup of apple cider, minced garlic, thyme, salt, and pepper. Marinate for at least 15-30 minutes.
- Meanwhile, bring a large pot of salted water to a boil and add the peeled and cubed sweet potatoes. Cook for about 15-20 minutes, or until fork-tender.
- Heat olive oil in your skillet over medium-high heat. Remove the pork from the marinade and sear the medallions for about 3-4 minutes on each side.
- In the same skillet, add the sliced onion and sauté for about 3-4 minutes until softened.
- Pour in the reserved marinade along with the remaining ½ cup of apple cider and bring it to a gentle simmer.
- Return the pork to the skillet, cover, and let it cook through for an additional 10-15 minutes until the internal temperature reaches 145°F (63°C).
- Add butter, heavy cream (or milk), salt, and cinnamon to the drained sweet potatoes and mash until smooth.
- To serve, plate the mashed sweet potatoes and top with the pork and sauce, garnished with fresh thyme.
Notes
Marinate the pork a day in advance for best flavor. Perfect for cozy dinners or gatherings.
