- 1 cup beer (light lager or pale ale)
- Corn tortillas
- Vegetable oil for frying
- Shredded cabbage
- Salsa
- Lime wedges
Instructions
- Prepare the Batter: In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until you have a smooth batter.
- Heat the Oil: Pour vegetable oil into your deep skillet and heat to around 350°F (175°C).
- Dredge the Fish: Dip each fish fillet into your prepared batter, allowing excess to drip off.
- Fry to Perfection: Carefully place the battered fish in the hot oil and fry for 4-5 minutes per side until golden brown.
- Drain: Remove the fish with a slotted spoon and place on paper towels to absorb excess oil.
- Warm the Tortillas: In a skillet over medium heat, warm your corn tortillas.
- Assemble the Tacos: Place fried fish inside warmed tortillas, top with shredded cabbage, salsa, and a spritz of lime juice. Serve immediately.
