Description

Delicious and fluffy berry muffins bursting with juicy blueberries and strawberries.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 cup blueberries
  • 1 cup strawberries, chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the dry ingredients by whisking together the all-purpose flour, whole wheat flour, sugar, baking powder, and salt in a large bowl.
  3. Mix the wet ingredients in another bowl, whisking the egg, milk, and vegetable oil until smooth.
  4. Combine the wet and dry ingredients by pouring the wet mixture into the dry mix, stirring gently until just combined.
  5. Fold in the blueberries and chopped strawberries, being careful not to crush the fruit.
  6. Fill each muffin cup about 3/4 full with batter.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean and the tops are golden brown.
  8. Cool slightly in the tin before transferring to a wire rack to finish cooling.

Notes

You can prepare the dry ingredients the night before for quick baking in the morning. If you have an air fryer, bake at 320°F (160°C) for about 15 minutes.
