  • 2 cups fresh blackberries
  • ½ cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 2 tsp cornstarch
  • ¼ cup pistachios, chopped
  • Extra blackberries for garnish

Instructions

  1. Prepare your pan: Line an 8×8-inch baking pan with parchment paper.
  2. Craft the crust: Combine crushed digestive biscuits with melted butter, press into the pan to form a crust.
  3. Blend the pistachio filling: Mix finely ground pistachios, powdered sugar, and heavy cream until smooth.
  4. Layer the pistachio mixture: Spread the pistachio filling evenly over the crust and refrigerate for 30 minutes.
  5. Prepare the cream cheese layer: Beat the cream cheese with powdered sugar and vanilla until smooth, then layer over the pistachio filling.
  6. Chill again: Refrigerate for another 30 minutes.
  7. Cook the blackberry topping: Combine blackberries, granulated sugar, lemon juice, and cornstarch in a saucepan. Cook until thickened, then cool slightly.
