Description

Delightful carrot cinnamon rolls filled with grated carrots and warm cinnamon, topped with a luscious cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 package (2 1/4 tsp) active dry yeast
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/2 cup grated carrots
  • 1 egg
  • 1 tsp cinnamon
  • 1/2 cup cream cheese (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 12 tbsp milk (for frosting)

Instructions

  1. Combine the flour, sugar, yeast, and salt in a large bowl.
  2. Heat the milk and butter until warm, then pour into the dry ingredients and stir to combine.
  3. Fold in grated carrots, egg, and cinnamon until a sticky dough forms.
  4. Knead the dough on a flour-dusted surface for about 5 minutes until smooth.
  5. Transfer the dough to a greased bowl, cover, and let it rise for 1 hour.
  6. Roll the dough out into a rectangle, spread cream cheese across it, then roll into a log.
  7. Slice the log into 1-inch pieces and place in a greased baking dish.
  8. Allow to rise for an additional 30 minutes.
  9. Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  10. Prepare the frosting by beating cream cheese, powdered sugar, vanilla, and milk until smooth.
  11. Drizzle the warm frosting over the rolls after baking.

Notes

For a vegan version, use coconut oil, plant milk, and flaxseed meal instead of eggs.
