- 1 head cauliflower, cut into florets
- 1 cup shredded cheese (cheddar or Gruyère)
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons flour
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Boil cauliflower florets in salted water for about 5 minutes. Drain and set aside.
- In a medium saucepan, melt butter over medium heat, then add the flour, stirring for about 1 minute to create a roux.
- Gradually whisk in milk and bring to a simmer, thickening the mixture while stirring often.
- Add cheese, garlic powder, salt, and pepper, and stir until melted and smooth.
- Combine the cauliflower with the cheese sauce, coating all florets.
- Transfer to a greased baking dish, sprinkle with panko breadcrumbs, and drizzle with olive oil.
- Bake for 20-25 minutes or until golden brown and bubbly.
- Serve warm as a side dish.
