Description

A comforting pot pie filled with shrimp, crab, and vegetables, topped with fluffy Cheddar Bay biscuits.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound lump crab meat
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 package Cheddar Bay biscuit mix
  • ½ cup shredded cheddar cheese
  • ¾ cup milk (for biscuits)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a large skillet over medium heat and add the shrimp, cooking for 3-4 minutes.
  3. Fold in the crab meat and frozen mixed vegetables.
  4. Sprinkle the flour over the seafood mixture and stir to coat.
  5. Pour in the seafood stock and heavy cream, stirring continuously until thickened, about 5 minutes.
  6. Add garlic powder, onion powder, dried thyme, salt, and pepper.
  7. Pour the seafood mixture into a greased 9×13-inch baking dish.
  8. Combine the Cheddar Bay biscuit mix with shredded cheddar, then stir in the milk until a dough forms.
  9. Dollop the biscuit dough over the seafood filling.
  10. Bake for 25-30 minutes until the biscuits are golden brown.
  11. Cool for 15 minutes before serving.

Notes

Can be made a day in advance; simply complete the biscuit topping and bake when ready to serve.
