Description

Ingredients

  • 2 cups broccoli florets
  • 1 pound chicken breast, diced
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Sear the diced chicken, seasoning with garlic powder, salt, and pepper, until browned and cooked through, about 6-8 minutes.
  3. Add broccoli florets and orzo, stirring to combine.
  4. Pour in the chicken broth and bring to a boil.
  5. Simmer covered for 10-12 minutes, until orzo absorbs the broth.
  6. Melt in the shredded cheese until creamy.
  7. Serve warm and enjoy!

Notes

Can be made ahead and stored in the refrigerator for up to three days. Add a splash of broth when reheating for creaminess.
