- 1 package of frozen tater tots
- 6 large eggs
- 1 cup of milk
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1 cup of diced bacon
- 1 cup of mixed veggies (bell peppers, onions, spinach, etc.)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the eggs and milk in a large mixing bowl until well combined.
- Add the diced bacon and mixed veggies to the egg mixture, stirring to combine thoroughly.
- Grease a 9×13-inch baking dish and spread the tater tots in an even layer along the bottom.
- Pour the egg mixture over the layer of tater tots.
- Sprinkle shredded cheese generously on top.
- Season with salt and pepper to taste.
- Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the cheese is melted.
- Allow the casserole to cool slightly before serving.
