Description

Delicious Cherry Cobbler Muffins filled with juicy cherries and topped with a crumbly mixture, perfect for any occasion.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh or frozen cherries
  • 1/2 cup all-purpose flour (for topping)
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl until well combined.
  3. Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl until thoroughly blended.
  4. Combine the wet ingredients with the dry ingredients, stirring gently with a spatula until just combined.
  5. Fold in the cherries, ensuring they are evenly distributed throughout the batter.
  6. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Mix together the topping ingredients until crumbly and sprinkle over the muffin batter.
  8. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
