Description

A warm, toasty bread hugging a succulent piece of chicken topped with bold pesto and creamy mozzarella.


Ingredients

Scale
  • 2 boneless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup pesto
  • 4 slices of fresh mozzarella cheese
  • 4 slices of ciabatta or sourdough bread
  • Fresh basil leaves (optional)
  • Tomato slices (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
  4. Remove the chicken and let it rest for a few minutes.
  5. Spread pesto on one side of each slice of bread.
  6. On two slices of bread (pesto side up), add the chicken, mozzarella, basil, and tomato slices.
  7. Top with the remaining bread slices, pesto side down.
  8. Grill the sandwich in the skillet for about 3-4 minutes on each side until golden brown and cheese melts.
  9. Slice and serve warm.

Notes

Make-ahead tips: Marinate the chicken in pesto for deeper flavor. Can be cooked in an air fryer or baked in the oven.
