A warm, toasty bread hugging a succulent piece of chicken topped with bold pesto and creamy mozzarella.
Ingredients

- 2 boneless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup pesto
- 4 slices of fresh mozzarella cheese
- 4 slices of ciabatta or sourdough bread
- Fresh basil leaves (optional)
- Tomato slices (optional)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat.
- Cook the chicken for 6-7 minutes on each side until golden brown and cooked through.
- Remove the chicken and let it rest for a few minutes.
- Spread pesto on one side of each slice of bread.
- On two slices of bread (pesto side up), add the chicken, mozzarella, basil, and tomato slices.
- Top with the remaining bread slices, pesto side down.
- Grill the sandwich in the skillet for about 3-4 minutes on each side until golden brown and cheese melts.
- Slice and serve warm.
Notes
Make-ahead tips: Marinate the chicken in pesto for deeper flavor. Can be cooked in an air fryer or baked in the oven.
