Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the diced chicken and cook until browned and cooked through—about 5-7 minutes.
- Push the chicken to the side of the skillet and add the mixed vegetables; stir-fry until tender, about 3-4 minutes.
- Add the cooked rice and soy sauce, mixing everything together.
- Create a space in the center of the skillet and pour in the beaten eggs, gently scrambling until cooked, about 2 minutes.
