Description

A comforting dish featuring savory chicken, colorful vegetables, and fluffy rice, all stir-fried together for a delightful meal.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the diced chicken and cook until browned and cooked through—about 5-7 minutes.
  3. Push the chicken to the side of the skillet and add the mixed vegetables; stir-fry until tender, about 3-4 minutes.
  4. Add the cooked rice and soy sauce, mixing everything together.
  5. Create a space in the center of the skillet and pour in the beaten eggs, gently scrambling until cooked, about 2 minutes.
  6. Mix everything thoroughly, allowing the ingredients to unite.
  7. Toss in the chopped green onions and season with salt and pepper to taste.
  8. Serve hot and enjoy.
