- 14 ounces rigatoni
- 1 tbsp unsalted butter
- 11 ounces spicy chorizo sausage
- 6 garlic cloves, minced
- 4 tbsp tomato paste
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- ¾ cup heavy cream
- ½ cup grated Parmesan
- 2 tbsp chopped parsley (optional)
Instructions
- Prep your ingredients: Mince the garlic, grate the Parmesan, and remove casings from the chorizo.
- Cook the rigatoni in salted boiling water until al dente (about 8-10 minutes), then drain and reserve 1 cup of cooking water.
- In a skillet, heat butter over medium heat, add chorizo, and sauté for about 5 minutes.
- Add minced garlic and cook for an additional minute, then stir in tomato paste and cook for 3 minutes.
- Season with oregano, salt, and black pepper, then pour in heavy cream and bring to a gentle boil.
- Reduce heat and stir in grated Parmesan until melted.
- Add the drained rigatoni to the sauce and toss gently, using reserved pasta water to reach desired sauce consistency.
- Adjust seasoning and finish with parsley before serving.
Notes
Serve with garlic bread and a mixed green salad for a complete meal. Great for meal prepping!
