Description

A comforting dish featuring rigatoni in a creamy sauce made with spicy chorizo, garlic, and Parmesan.


Ingredients

  • 14 ounces rigatoni
  • 1 tbsp unsalted butter
  • 11 ounces spicy chorizo sausage
  • 6 garlic cloves, minced
  • 4 tbsp tomato paste
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¾ cup heavy cream
  • ½ cup grated Parmesan
  • 2 tbsp chopped parsley (optional)

Instructions

  1. Prep your ingredients: Mince the garlic, grate the Parmesan, and remove casings from the chorizo.
  2. Cook the rigatoni in salted boiling water until al dente (about 8-10 minutes), then drain and reserve 1 cup of cooking water.
  3. In a skillet, heat butter over medium heat, add chorizo, and sauté for about 5 minutes.
  4. Add minced garlic and cook for an additional minute, then stir in tomato paste and cook for 3 minutes.
  5. Season with oregano, salt, and black pepper, then pour in heavy cream and bring to a gentle boil.
  6. Reduce heat and stir in grated Parmesan until melted.
  7. Add the drained rigatoni to the sauce and toss gently, using reserved pasta water to reach desired sauce consistency.
  8. Adjust seasoning and finish with parsley before serving.

Notes

Serve with garlic bread and a mixed green salad for a complete meal. Great for meal prepping!
