- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces.
- Heat oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until golden brown, about 5-7 minutes.
- Lower the heat and add cream cheese and chicken broth, stirring until smooth.
- Toss in gnocchi and spinach, cover, and simmer for about 5-7 minutes until gnocchi are tender.
- Stir in shredded cheddar cheese until melted.
- Serve hot, garnished with extra cheese if desired.
Notes
Make-ahead tips: Prepare the creamy sauce in advance and refrigerate. Reheat when ready to serve. Customize with sun-dried tomatoes or roasted garlic.
