Description

A comforting and creamy dish featuring tender gnocchi, chicken, and spinach in a luscious sauce.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until golden brown, about 5-7 minutes.
  4. Lower the heat and add cream cheese and chicken broth, stirring until smooth.
  5. Toss in gnocchi and spinach, cover, and simmer for about 5-7 minutes until gnocchi are tender.
  6. Stir in shredded cheddar cheese until melted.
  7. Serve hot, garnished with extra cheese if desired.
