- 16 ounces frozen pierogi (cheese or potato-filled)
- 12 ounces sliced turkey sausage (mild or spicy)
- 2 tablespoons olive oil or butter
- 1 diced onion
- 2 cloves garlic, minced
- 2 cups fresh spinach (or kale)
- 1 cup heavy cream
- ½ cup sour cream
- 1 teaspoon dried dill
- Salt and freshly cracked pepper, to taste
- ½ cup grated Parmesan cheese (optional)
- Chopped fresh parsley (or chives), for garnish
Instructions
- In a large skillet, heat the olive oil (or butter) over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.
- Add minced garlic and sliced turkey sausage to the skillet. Cook for an additional 4-5 minutes, until the sausage browns slightly.
- Stir in the fresh spinach (or kale) and allow it to wilt for 2-3 minutes.
- Reduce the heat to low and pour in the heavy cream and sour cream, stirring to combine.
- Gently add the frozen pierogi, ensuring they are coated with the sauce. Cover and simmer for 8-10 minutes, until the pierogi are heated through.
- Stir in the dried dill and season with salt and pepper to taste.
- If using, sprinkle grated Parmesan cheese on top and stir until melted.
- Garnish with fresh parsley or chives and serve immediately.
Notes
Thaw frozen pierogi overnight for quicker cooking. You can prepare the dish in advance and reheat before serving.
