Description
A delightful and comforting pasta dish featuring creamy goat cheese and fresh cherry tomatoes, perfect for any occasion.
Ingredients
Scale
- 8 oz pasta (any shape like penne or fusilli)
- 2 cups cherry tomatoes, halved
- 1 cup goat cheese, crumbled
- 1 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
- Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant and slightly golden.
- Add cherry tomatoes: Toss in the halved cherry tomatoes, letting them cook for 5-7 minutes until they burst open and release their juices.
- Melt the goat cheese: Lower the heat, then add the crumbled goat cheese to the skillet. Stir gently until it melts and forms a creamy sauce.
- Combine pasta and sauce: Add the cooked pasta to the skillet, tossing it with the sauce. Add reserved pasta water as needed for desired creaminess.
- Finish with fresh basil: Stir in chopped basil, seasoning with salt and pepper to taste.
- Serve: Plate warm, topped with grated Parmesan cheese if desired.
Notes
Consider experimenting with different pasta shapes or adding sautéed spinach for extra greens.
