Description

  • 2 cups cherry tomatoes, halved
  • 1 cup goat cheese, crumbled
  • 1 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
  2. Sauté garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant and slightly golden.
  3. Add cherry tomatoes: Toss in the halved cherry tomatoes, letting them cook for 5-7 minutes until they burst open and release their juices.
  4. Melt the goat cheese: Lower the heat, then add the crumbled goat cheese to the skillet. Stir gently until it melts and forms a creamy sauce.
  5. Combine pasta and sauce: Add the cooked pasta to the skillet, tossing it with the sauce. Add reserved pasta water as needed for desired creaminess.
  6. Finish with fresh basil: Stir in chopped basil, seasoning with salt and pepper to taste.
  7. Serve: Plate warm, topped with grated Parmesan cheese if desired.
