Ingredients

  • 1/2 cup of butter, browned
  • 1 cup of chicken or vegetable broth
  • 1/2 cup of heavy cream or milk
  • Salt and pepper to taste
  • Fresh herbs (like parsley or chives) for garnish
  • Garlic powder (optional)
  • Onion powder (optional)

Instructions

  1. Prepare the potatoes: Place your peeled and diced potatoes into the crockpot. Add the rich chicken or vegetable broth.
  2. Set and forget: Cover the crockpot and cook on low for 360-480 minutes or high for 180-240 minutes until the potatoes are fork-tender.
  3. Drain liquid: Once the potatoes are cooked, drain any excess liquid.
  4. Add the goodness: Pour in the browned butter, along with the heavy cream or milk. Season generously with salt, pepper, plus any optional spices.
  5. Mash away: Use a potato masher or hand mixer to blend until your desired creaminess is achieved.
  6. Serve warm: Dish out the mashed potatoes immediately, garnishing with fresh herbs.

Notes

For extra creaminess, reserve a bit of the broth and add gradually after mashing. Taste as you go to adjust seasoning.
