Description

A tender and juicy pork tenderloin slow cooked with earthy potatoes, sweet carrots, and aromatic garlic, creating a comforting meal.


Ingredients

  • 2 pounds pork tenderloin
  • 1 onion, sliced
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Herbs of your choice (e.g. thyme, rosemary)

Instructions

  1. Sear the pork: Heat olive oil in a skillet over medium-high heat. Season the pork tenderloin generously with salt and pepper. Sear the pork on all sides until golden brown, about 2-3 minutes per side.
  2. Prepare the vegetables: In the crockpot, layer the sliced onion, followed by the chopped carrots, and diced potatoes.
  3. Add the pork: Carefully place the seared pork tenderloin on top of the vegetables.
  4. Pour in the broth: Pour the chicken broth over the tenderloin. Sprinkle minced garlic and chosen herbs on top.
  5. Set the crockpot: Cover the pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve: Once the cooking time is complete, serve hot, slicing the pork tenderloin into hearty pieces alongside the vegetables.
