- 1 onion, sliced
- 2 carrots, chopped
- 2 potatoes, diced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 tablespoon olive oil

- Herbs of your choice (e.g. thyme, rosemary)
Instructions
- Sear the pork: Heat olive oil in a skillet over medium-high heat. Season the pork tenderloin generously with salt and pepper. Sear the pork on all sides until golden brown, about 2-3 minutes per side.
- Prepare the vegetables: In the crockpot, layer the sliced onion, followed by the chopped carrots, and diced potatoes.
- Add the pork: Carefully place the seared pork tenderloin on top of the vegetables.
- Pour in the broth: Pour the chicken broth over the tenderloin. Sprinkle minced garlic and chosen herbs on top.
- Set the crockpot: Cover the pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Serve: Once the cooking time is complete, serve hot, slicing the pork tenderloin into hearty pieces alongside the vegetables.
