Ingredients

  • 2 pounds beef chuck roast or stew meat
  • 4 garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 3 cups beef broth
  • 1 tablespoon tomato paste
  • 2 cups uncooked pasta of your choice
  • 1/2 cup grated Parmesan cheese (or shredded mozzarella)
  • 2 tablespoons olive oil (optional, for browning beef)
  • Fresh parsley (chopped, optional, for garnish)

Instructions

  1. Prep the beef by seasoning it with salt, pepper, Italian seasoning, and garlic. Optionally, brown it in olive oil for 3 minutes on each side.
  2. Transfer the beef into a slow cooker and add garlic, Italian seasoning, onion powder, paprika, salt, and pepper.
  3. Pour in the beef broth and add tomato paste, stirring to combine.
  4. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  5. Boil water in a large pot, salt it generously, and cook pasta to al dente according to package instructions.
  6. Once the beef is tender, shred it and stir in the cooked pasta.
  7. Add cheese, allowing it to melt and create a creamy sauce.
  8. Garnish with fresh parsley and serve warm.
