Description

A romantic and flavorful pork tenderloin dish enveloped in a creamy garlic sauce with sun-dried tomatoes, perfect for special occasions.


Ingredients

  • 1 lb Pork Tenderloin
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Butter
  • 2 tbsp Olive Oil
  • 1 tbsp Garlic Powder
  • 2 tbsp Flour
  • 4 cloves Garlic, minced
  • 1/2 cup Dry White Wine or Chicken Broth
  • 1 cup Heavy/Whipping Cream
  • 1 tbsp Tomato Paste
  • 1/3 cup Sun-Dried Tomatoes
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Crushed Red Pepper Flakes
  • 1/3 cup Freshly Grated Parmesan Cheese
  • 1 handful Fresh Basil, chopped or torn

Instructions

  1. Season the pork tenderloin generously with salt and pepper on all sides.
  2. In a preheated skillet over medium-high heat, add butter and olive oil, then sear the pork for 3-4 minutes on each side until golden brown.
  3. Remove the pork and add minced garlic to the skillet, sauté for 30 seconds.
  4. Sprinkle flour over the garlic and stir for about a minute. Gradually pour in white wine or chicken broth, scrapping up the brown bits.
  5. Add heavy cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes. Stir until the sauce thickens, about 2-3 minutes.
  6. Return the pork to the skillet, spoon sauce over it, and simmer for 4-5 minutes until the internal temperature reaches 145°F.
  7. Garnish with freshly grated Parmesan and torn basil before serving.

Notes

For deeper flavor, marinate the pork overnight. You can also use an air fryer for a healthier version, cooking at 400°F for 15-20 minutes.
