Ingredients
Scale
- 1 lb Pork Tenderloin
- Salt, to taste
- Pepper, to taste
- 2 tbsp Butter
- 2 tbsp Olive Oil
- 1 tbsp Garlic Powder
- 2 tbsp Flour
- 4 cloves Garlic, minced
- 1/2 cup Dry White Wine or Chicken Broth
- 1 cup Heavy/Whipping Cream
- 1 tbsp Tomato Paste
- 1/3 cup Sun-Dried Tomatoes
- 1/2 tsp Dried Oregano
- 1/4 tsp Crushed Red Pepper Flakes
- 1/3 cup Freshly Grated Parmesan Cheese
- 1 handful Fresh Basil, chopped or torn
Instructions
- Season the pork tenderloin generously with salt and pepper on all sides.
- In a preheated skillet over medium-high heat, add butter and olive oil, then sear the pork for 3-4 minutes on each side until golden brown.
- Remove the pork and add minced garlic to the skillet, sauté for 30 seconds.
- Sprinkle flour over the garlic and stir for about a minute. Gradually pour in white wine or chicken broth, scrapping up the brown bits.
- Add heavy cream, tomato paste, sun-dried tomatoes, oregano, and red pepper flakes. Stir until the sauce thickens, about 2-3 minutes.
- Return the pork to the skillet, spoon sauce over it, and simmer for 4-5 minutes until the internal temperature reaches 145°F.
- Garnish with freshly grated Parmesan and torn basil before serving.
Notes
For deeper flavor, marinate the pork overnight. You can also use an air fryer for a healthier version, cooking at 400°F for 15-20 minutes.
