Description

Ingredients

  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 teaspoon vanilla extract

  • Royal icing or frosting for decoration
  • Colorful candy (like jelly beans or chocolate eggs) for filling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the flour, baking soda, and baking powder in a medium bowl. Set aside.
  3. Cream together the softened butter and sugar in a large mixing bowl using an electric mixer until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and blend until fully combined.
  5. Blend in the dry ingredients gradually until just combined.
  6. Press portions of the dough into the bottom and sides of a greased muffin tin to form cups.
  7. Bake for 8 to 10 minutes or until golden brown.
  8. Cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  9. Fill the cooled cookie cups with royal icing or frosting and decorate with colorful candy.
