- 3 ripe bananas
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 tablespoon cinnamon
- 1/4 cup brown sugar
- Cream cheese frosting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan generously.
- Mash the ripe bananas in a mixing bowl until creamy.
- Stir in the melted butter until combined.
- Mix in the sugar, egg, and vanilla until well-blended.
- Sprinkle the baking soda and salt over the mixture, folding in to ensure even distribution.
- Add the flour last, stirring gently until just combined.
- Combine cinnamon and brown sugar in a small bowl.
- Layer half of the batter into the prepared loaf pan followed by half of the cinnamon mixture.
- Add the remaining batter and top it with the rest of the cinnamon mixture.
- Swirl the cinnamon mixture into the batter with a knife.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan before removing. Optional: Drizzle with cream cheese frosting.
Notes
Ensure bananas are very ripe for optimal sweetness. Don’t overmix the batter for a light texture.
