Description

A delicious and easy shrimp fried rice recipe packed with flavor, perfect for a quick weeknight meal.


Ingredients

Scale
  • 2 cups cooked rice (day-old preferred)
  • 1 cup shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a skillet over medium heat until shimmering.
  2. Add the shrimp to the skillet and cook until pink, about 2-3 minutes. Remove and set aside.
  3. Toss in the mixed vegetables and sauté until tender.
  4. Push the veggies aside, add the beaten eggs, and scramble until cooked.
  5. Stir the rice into the mixture, coating with oil and soy sauce.
  6. Fold the shrimp back into the skillet and season with salt and pepper.
  7. Finish with chopped green onions.

Notes

Use day-old rice for best results. Feel free to customize with other proteins or vegetables.
