Ingredients

- 2 cups cooked rice (day-old preferred)
- 1 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a skillet over medium heat until shimmering.
- Add the shrimp to the skillet and cook until pink, about 2-3 minutes. Remove and set aside.
- Toss in the mixed vegetables and sauté until tender.
- Push the veggies aside, add the beaten eggs, and scramble until cooked.
- Stir the rice into the mixture, coating with oil and soy sauce.
- Fold the shrimp back into the skillet and season with salt and pepper.
- Finish with chopped green onions.
Notes
Use day-old rice for best results. Feel free to customize with other proteins or vegetables.
