Description

Delicious cookies that combine the rich flavors of espresso, bittersweet cocoa, and creamy white chocolate for a sophisticated treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup espresso, brewed and cooled
  • 1 teaspoon rum extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • Coffee beans for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Mix in the cooled espresso and rum extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Using a tablespoon or dough scoop, portion the cookie dough onto a lined baking sheet, spacing them apart.
  7. Bake for 10-12 minutes until the edges are set and tops are slightly cracked.
  8. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  9. Melt the white chocolate chips until smooth and dip the bottom of each cooled cookie in it, placing them back on parchment paper.
  10. Top each cookie with a coffee bean before the chocolate hardens.

Notes

For a richer chocolate flavor, substitute with dark chocolate chips. Cookies can be refrigerated or frozen for future use.
