- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup espresso, brewed and cooled
- 1 teaspoon rum extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white chocolate chips
- Coffee beans for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cream the softened butter and sugar together until light and fluffy.
- Mix in the cooled espresso and rum extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Using a tablespoon or dough scoop, portion the cookie dough onto a lined baking sheet, spacing them apart.
- Bake for 10-12 minutes until the edges are set and tops are slightly cracked.
- Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
- Melt the white chocolate chips until smooth and dip the bottom of each cooled cookie in it, placing them back on parchment paper.
- Top each cookie with a coffee bean before the chocolate hardens.
Notes
For a richer chocolate flavor, substitute with dark chocolate chips. Cookies can be refrigerated or frozen for future use.
