Delicious and refreshing frozen yogurt granola bars combining creamy yogurt with crunchy oats and vibrant berries for a nutritious snack.

- 1 ½ cups old-fashioned rolled oats (gluten-free if needed)
- ⅓ cup nut butter (almond or peanut butter)
- 3 tbsp maple syrup or honey
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- ½ tsp salt
- 2 cups vanilla yogurt or skyr
- ⅓ cup fresh strawberries (sliced)
- ¼ cup fresh blueberries
- ¼ cup raspberries and/or blackberries (cut in half—optional)
Instructions
- Prep the Baking Dish: Line an 8’x8” or 9’x9” baking dish with parchment paper and set aside.
- Make the Granola Base: In a large mixing bowl, combine the rolled oats, nut butter, maple syrup, vanilla extract, cinnamon, and salt. Mix until combined and press firmly into the bottom of the lined baking dish.
- Assemble: Spread the vanilla yogurt or skyr evenly over the granola base and sprinkle your sliced strawberries, blueberries, and optional berries over the yogurt layer.
- Freeze: Place the dish in the freezer for a minimum of 2 hours.
- Cut and Serve: Once frozen solid, remove bars using the parchment and cut into squares. Enjoy cold.
Notes
For a fudgier texture, allow the yogurt to soften slightly before slicing. Garnish with a drizzle of honey for added sweetness.
