A comforting Gnocchi Carbonara with a rich, creamy sauce, enhanced by the smokiness of bacon and the sharpness of Parmesan.

- 1 pound Potato Gnocchi
- 6 ounces Bacon
- 2 Eggs
- 1 cup Parmesan Cheese
- 2 cloves Garlic
- 2 tablespoons Chopped Fresh Parsley
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 tablespoons Olive Oil
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi. Once they float to the surface, scoop them out and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced bacon and sauté until crispy.
- Add the minced garlic, stirring constantly until fragrant, about 30 seconds.
- Add the cooked gnocchi to the skillet, gently tossing it with the bacon and garlic. Remove skillet from heat.
- In a bowl, whisk together the eggs and grated Parmesan. Quickly add to the gnocchi, stirring vigorously to coat.
- Season with salt and black pepper. Mix in the fresh parsley.
- Serve immediately with extra Parmesan and black pepper on top.
Notes
This dish keeps well in the fridge for about 2-3 days. You can customize it by adding sautéed mushrooms or spinach.
