Description

A comforting Gnocchi Carbonara with a rich, creamy sauce, enhanced by the smokiness of bacon and the sharpness of Parmesan.


Ingredients

  • 1 pound Potato Gnocchi
  • 6 ounces Bacon
  • 2 Eggs
  • 1 cup Parmesan Cheese
  • 2 cloves Garlic
  • 2 tablespoons Chopped Fresh Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi. Once they float to the surface, scoop them out and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced bacon and sauté until crispy.
  3. Add the minced garlic, stirring constantly until fragrant, about 30 seconds.
  4. Add the cooked gnocchi to the skillet, gently tossing it with the bacon and garlic. Remove skillet from heat.
  5. In a bowl, whisk together the eggs and grated Parmesan. Quickly add to the gnocchi, stirring vigorously to coat.
  6. Season with salt and black pepper. Mix in the fresh parsley.
  7. Serve immediately with extra Parmesan and black pepper on top.

Notes

This dish keeps well in the fridge for about 2-3 days. You can customize it by adding sautéed mushrooms or spinach.
