- 4 boneless, skinless chicken breasts
- 4 slices of ham
- 4 slices of Swiss cheese
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken between sheets of plastic wrap with a meat mallet to an even thickness of 1/2 inch.
- Season the chicken on both sides with salt and pepper.
- Layer a slice of ham and a slice of Swiss cheese on each chicken breast.
- Roll each chicken breast tightly and secure with toothpicks if necessary.
- Set up your breading station with bowls for flour, beaten eggs, and panko.
- Dredge each chicken roll in flour, then egg, and finally panko breadcrumbs.
- Heat oil in a skillet over medium heat and fry each roll until golden brown, about 3-4 minutes per side.
- Transfer the chicken to a baking dish and finish cooking in the oven for about 20 minutes.
- Rest the chicken for a few minutes before slicing.
Notes
