Description

  • 4 slices pepper Jack cheese
  • Fresh cilantro, finely minced (optional)

Instructions

  1. Prepare the Marinade: In a large bowl, mix together the salsa verde, olive oil, lime juice, cumin, salt, and pepper.
  2. Marinate the Chicken: Add the chicken breasts to the bowl, ensuring each piece gets evenly coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat the Grill: Heat your grill to medium-high.
  4. Grill the Chicken: Place the chicken on the grill, cooking each side for about 4-5 minutes, until the internal temperature reaches 165°F.
  5. Melt the Cheese: In the final minute of grilling, place a slice of pepper Jack cheese on each chicken breast.
  6. Rest and Serve: Remove the chicken from the grill and let it sit for a few minutes before serving.

Notes

You can substitute chicken with turkey or firm tofu, and use Monterey Jack cheese for a milder flavor.
