Description

Crispy beef taquitos filled with flavorful beef and cheese, perfect for any gathering or cozy night in.


Ingredients

Scale
  • 1 pound ground beef
  • 1/2 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Cooking spray
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef with the chopped onion over medium heat until cooked through.
  3. Stir in garlic powder, chili powder, cumin, salt, and pepper.
  4. Warm the corn tortillas slightly to make them easier to roll.
  5. Place a portion of the beef mixture and a sprinkle of cheese on each tortilla.
  6. Roll them tightly, placing seam-side down on a baking sheet.
  7. Spray the tops with cooking spray.
  8. Bake for 15-20 minutes until crispy and golden, flipping halfway.
  9. Serve with sour cream and salsa if desired.

Notes

Make-ahead by preparing the beef mixture in advance. Store leftovers in an airtight container for up to 3 days.
