Ingredients

- 1 pound ground beef
- 1/2 onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 corn tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Cooking spray
- Sour cream and salsa for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Brown the ground beef with the chopped onion over medium heat until cooked through.
- Stir in garlic powder, chili powder, cumin, salt, and pepper.
- Warm the corn tortillas slightly to make them easier to roll.
- Place a portion of the beef mixture and a sprinkle of cheese on each tortilla.
- Roll them tightly, placing seam-side down on a baking sheet.
- Spray the tops with cooking spray.
- Bake for 15-20 minutes until crispy and golden, flipping halfway.
- Serve with sour cream and salsa if desired.
