Description

A delightful strawberry cake with a light lemon frosting, perfect for summer gatherings.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 cup strawberries, pureed
  • 2 cups powdered sugar
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pan.
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Add the softened butter, eggs, vanilla extract, and milk to the flour mixture and beat until smooth.
  4. Fold in the pureed strawberries gently.
  5. Pour the batter into the prepared cake pan and smooth it out.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Prepare the lemon frosting by whisking together powdered sugar, lemon juice, and lemon zest.
  8. Frost the cooled cake generously with the lemon frosting.

Notes
