- Salt and black pepper, to taste
- 1 tablespoon Olive oil
- 2 Fresh peaches, diced
- 1 Jalapeño pepper, finely chopped
- 1/4 cup Peach jam or glaze
- 2 cloves Garlic, minced
- 1 tablespoon Lime juice
Instructions
- Season the Chicken: Generously sprinkle salt and black pepper over the chicken thighs, ensuring every inch is well-coated.
- Heat the Olive Oil: In a non-stick skillet, heat a tablespoon of olive oil over medium heat until shimmering.
- Cook the Chicken: Place the seasoned chicken thighs in the skillet, skin-side down. Cook for about 6-7 minutes on each side until golden brown.
- Prepare the Glaze: In a separate mixing bowl, combine diced peaches, jalapeños, peach jam, minced garlic, and lime juice. Mix until well blended.
- Glaze the Chicken: Once the chicken is cooked, remove it from the skillet and coat each thigh with the peach mixture.
- Heat the Flavors: Return the glazed chicken to the skillet and cook for an additional 2-3 minutes.

Notes
For a milder dish, remove the seeds from jalapeños. This dish can also be made with firm tofu for a vegetarian option.
