Description

A vibrant dish combining tender chicken thighs with a sweet and spicy peach-jalapeño glaze, creating a delightful balance of flavors.


Ingredients

  • 4 Chicken thighs
  • Salt and black pepper, to taste
  • 1 tablespoon Olive oil
  • 2 Fresh peaches, diced
  • 1 Jalapeño pepper, finely chopped
  • 1/4 cup Peach jam or glaze
  • 2 cloves Garlic, minced
  • 1 tablespoon Lime juice

Instructions

  1. Season the Chicken: Generously sprinkle salt and black pepper over the chicken thighs, ensuring every inch is well-coated.
  2. Heat the Olive Oil: In a non-stick skillet, heat a tablespoon of olive oil over medium heat until shimmering.
  3. Cook the Chicken: Place the seasoned chicken thighs in the skillet, skin-side down. Cook for about 6-7 minutes on each side until golden brown.
  4. Prepare the Glaze: In a separate mixing bowl, combine diced peaches, jalapeños, peach jam, minced garlic, and lime juice. Mix until well blended.
  5. Glaze the Chicken: Once the chicken is cooked, remove it from the skillet and coat each thigh with the peach mixture.
  6. Heat the Flavors: Return the glazed chicken to the skillet and cook for an additional 2-3 minutes.
  7. Serve and Enjoy: Plate the chicken and drizzle any remaining glaze over the top.

Notes

For a milder dish, remove the seeds from jalapeños. This dish can also be made with firm tofu for a vegetarian option.
