Description

A tropical-inspired sandwich featuring spicy jerk chicken, sweet grilled pineapple, and crunchy coleslaw.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 ripe pineapple, peeled, cored, and sliced
  • 1 cup coleslaw mix (cabbage and carrots)
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey (optional)
  • Salt and pepper to taste
  • 4 burger buns
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. In a mixing bowl, combine the chicken thighs with jerk seasoning and olive oil. Massage the spices into the meat and let it marinate for at least 15 minutes.
  2. Preheat your grill or grill pan over medium heat. Place the pineapple slices on the grill and cook for 3-4 minutes on each side until golden brown.
  3. Grill the marinated chicken thighs for about 6-7 minutes per side, or until fully cooked and juices run clear.
  4. In a bowl, whisk together the coleslaw mix, mayonnaise, apple cider vinegar, honey (if using), salt, and pepper until uniformly coated.
  5. On each burger bun, lay down a grilled chicken thigh, top with grilled pineapple slices, and finish with a scoop of coleslaw.
  6. Garnish with fresh cilantro or parsley and serve immediately.

Notes

Marinate chicken up to 24 hours in advance for deeper flavor. Preheat grill for best results.
