A tropical-inspired sandwich featuring spicy jerk chicken, sweet grilled pineapple, and crunchy coleslaw.

- 4 boneless, skinless chicken thighs
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 ripe pineapple, peeled, cored, and sliced
- 1 cup coleslaw mix (cabbage and carrots)
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey (optional)
- Salt and pepper to taste
- 4 burger buns
- Fresh cilantro or parsley for garnish (optional)
Instructions
- In a mixing bowl, combine the chicken thighs with jerk seasoning and olive oil. Massage the spices into the meat and let it marinate for at least 15 minutes.
- Preheat your grill or grill pan over medium heat. Place the pineapple slices on the grill and cook for 3-4 minutes on each side until golden brown.
- Grill the marinated chicken thighs for about 6-7 minutes per side, or until fully cooked and juices run clear.
- In a bowl, whisk together the coleslaw mix, mayonnaise, apple cider vinegar, honey (if using), salt, and pepper until uniformly coated.
- On each burger bun, lay down a grilled chicken thigh, top with grilled pineapple slices, and finish with a scoop of coleslaw.
- Garnish with fresh cilantro or parsley and serve immediately.
Notes
Marinate chicken up to 24 hours in advance for deeper flavor. Preheat grill for best results.
