A refreshing and creamy yogurt bark infused with zesty key lime, topped with crunchy graham crackers and toasted coconut, perfect for summer snacking.
Ingredients

- 2.5 cups Greek yogurt
- 3.5 tbsp key lime juice
- 2 tbsp powdered swerve or 1 tbsp honey
- 1 teaspoon vanilla extract
- 1 tablespoon lime zest
- 1/3 cup crushed gluten-free graham crackers
- 1/4 cup toasted coconut (unsweetened)
- 1 scoop vanilla protein powder
Instructions
- In a medium mixing bowl, add the Greek yogurt, key lime juice, protein powder, powdered swerve (or your sweetener of choice), and vanilla extract. Whisk until smooth and well combined.
- Line your baking sheet with parchment paper or a silicone baking mat.
- Spread the yogurt mixture evenly over the prepared baking sheet, about ½ inch thick.
- Sprinkle the crushed graham crackers, toasted coconut, and lime zest over the yogurt layer, gently pressing them in.
- Place the baking sheet in the freezer for 2-3 hours or until fully set.
- Once frozen, remove from the freezer and break into pieces.
- Store in an airtight container in the freezer for up to 2 weeks.
