Ingredients

  • Crisp Zester

Instructions

  1. Zest the Lemons: Using the crisp zester, carefully peel long strips off the lemon’s outer skin.
  2. Boil the Zest: Place your lemon zest in the saucepan and cover it with water. Bring it to a boil and let it bubble for 30 seconds.
  3. Strain and Repeat: Strain the zest with cold water to remove bitterness. Repeat this boiling process two more times.
  4. Make Simple Syrup: In the same saucepan, combine the sugar and water, stirring until the sugar completely dissolves.
  5. Add Zest Back In: Lower the heat and add the boiled lemon zest. Allow it to simmer for an hour.
  6. Strain Once More: After simmering, strain the zest out, keeping the syrup.
  7. Candy the Zest: Toss the zest in a bowl of sugar, turning these fragrant strips into crunchy bites of candy.
