- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1/4 to 1/2 cup cold water
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 cup water
- 3 large egg yolks
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons unsalted butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine the flour, powdered sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Add the egg yolk and just enough cold water to form a dough.
- Roll out the dough on a floured surface. Fit it into a tart pan, pressing gently against the edges. Prick the bottom with a fork, preventing bubbling. Bake for 20-25 minutes until golden brown. Allow it to cool completely.
- In a saucepan, mix the sugar, cornstarch, and salt. Add water and cook over medium heat, stirring constantly, until thick. Once thickened, stir in the egg yolks, lemon juice, and lemon zest, and cook for an additional 2-3 minutes. Remove from heat and add the butter, stirring until smooth.
- Pour the lemon filling into the cooled crust, smoothing it out evenly.
- For the meringue, beat the egg whites with cream of tartar until soft peaks form. Gradually add sugar, continuing to beat until stiff peaks form. Spread the meringue over the lemon filling, sealing it to the edges to prevent shrinking.
- Bake the tart for 10-15 minutes or until the meringue turns a beautiful golden color. Once done, remove from the oven and allow to cool before serving.
Notes
For best results, chill your ingredients before starting. The crust can be prepared a day in advance.
