Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk together the flour, baking soda, and salt in a mixing bowl.
- Cream the softened butter and granulated sugar in another bowl until light and fluffy, about 3-5 minutes.
- Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until just combined.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Scoop tablespoons of dough onto the lined baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with powdered sugar before serving if desired.
Notes
For a gluten-free version, substitute with a 1-for-1 gluten-free flour blend. Store cookies in an airtight container for up to one week.
