Description

Delightful lemon sugar cookies that are soft, chewy, and bursting with zesty flavor, perfect for any occasion.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a mixing bowl.
  3. Cream the softened butter and granulated sugar in another bowl until light and fluffy, about 3-5 minutes.
  4. Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until just combined.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Scoop tablespoons of dough onto the lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  9. Dust with powdered sugar before serving if desired.

Notes
