- 1 packet taco seasoning

Instructions
- Preheat your oven to 425°F (220°C).
- Toss diced potatoes in olive oil, salt, and pepper. Spread on a baking sheet.
- Roast for 25-30 minutes or until golden brown and crispy, flipping halfway.
- Heat a skillet over medium. Brown the ground meat and stir in taco seasoning, following package instructions.
- Combine roasted potatoes, seasoned meat, black beans, corn, and diced tomatoes in a large mixing bowl. Toss gently.
- Serve in bowls topped with avocado, shredded cheese, and cilantro.
