Description

A comforting and customizable dish that combines crispy roasted potatoes, seasoned meat, and fresh toppings in a vibrant bowl.


Ingredients

  • 4 medium potatoes, diced
  • 1 pound ground beef or turkey
  • 1 tablespoon olive oil
  • 1 packet taco seasoning
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese (Cheddar or Mexican blend)
  • Fresh cilantro
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced potatoes in olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes or until golden brown and crispy, flipping halfway.
  4. Heat a skillet over medium. Brown the ground meat and stir in taco seasoning, following package instructions.
  5. Combine roasted potatoes, seasoned meat, black beans, corn, and diced tomatoes in a large mixing bowl. Toss gently.
  6. Serve in bowls topped with avocado, shredded cheese, and cilantro.
