Description

Mango Curd Bars are a delightful fusion of creamy mango filling atop a buttery crust, perfect for any dessert table.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup mango puree
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 cup raspberry puree

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 8×8 inch baking pan for effortless removal.
  2. Combine the flour and powdered sugar in a large bowl. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the crumb mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for about 15-20 minutes until it turns lightly golden on the edges.
  5. Whisk together the mango puree, eggs, granulated sugar, lemon juice, and baking powder until smooth.
  6. Pour the mango mixture over your baked crust, spreading it evenly.
  7. Drop dollops of raspberry puree randomly over the mango filling and swirl gently with a knife.
  8. Return the pan to the oven and bake for an additional 20-25 minutes.
  9. Allow the bars to cool completely in the pan before slicing them into squares.
