Ingredients

- 2 ripe bananas, mashed
- 1/2 cup sugar
- 1/4 cup butter, softened
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup chocolate chips
- 1/4 cup milk (if needed)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the mashed bananas, sugar, and softened butter. Mix until smooth.
- Add the egg and vanilla extract to the banana mixture. Stir well to combine.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
- Carefully fold in the chocolate chips.
- If the dough is too dry, add milk one tablespoon at a time until it holds together.
- Turn the dough out onto a floured surface. Knead gently and pat into a circle about 1 inch thick.
- Use a sharp knife to cut the dough into wedges or use a biscuit cutter.
- Arrange the scones on the baking sheet, leaving space between them. Bake for 15-20 minutes until golden brown.
- Let the scones cool for a few minutes before transferring to a wire rack.
Notes
Use very ripe bananas for maximum sweetness. These scones can be made in advance and frozen for later use.
