Description

Delightfully tender scones infused with ripe bananas and rich chocolate chips, perfect for breakfast or as a sweet treat.


Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1/4 cup milk (if needed)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, sugar, and softened butter. Mix until smooth.
  3. Add the egg and vanilla extract to the banana mixture. Stir well to combine.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Carefully fold in the chocolate chips.
  6. If the dough is too dry, add milk one tablespoon at a time until it holds together.
  7. Turn the dough out onto a floured surface. Knead gently and pat into a circle about 1 inch thick.
  8. Use a sharp knife to cut the dough into wedges or use a biscuit cutter.
  9. Arrange the scones on the baking sheet, leaving space between them. Bake for 15-20 minutes until golden brown.
  10. Let the scones cool for a few minutes before transferring to a wire rack.

Notes

Use very ripe bananas for maximum sweetness. These scones can be made in advance and frozen for later use.
