Description

Deliciously sweet no-bake bites filled with juicy blueberries and a creamy almond butter and Greek yogurt mixture.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1 cup fresh blueberries
  • 2 tablespoons honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine rolled oats, Greek yogurt, honey (or maple syrup), almond (or peanut) butter, vanilla extract, and salt. Stir until well combined.
  2. Gently fold in fresh blueberries, taking care not to crush them.
  3. Form small bite-sized balls with your hands and place them on a parchment-lined baking sheet.
  4. Chill in the refrigerator for at least 30 minutes to firm up.
  5. Enjoy as a healthy snack or dessert!

Notes

These bites can be made ahead of time and stored in an airtight container in the fridge for up to a week. Feel free to customize with nuts or seeds.
