- 2 ripe bananas, mashed
- 1/2 cup Nutella
- 1/2 cup sugar
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Combine the mashed bananas, sugar, vegetable oil, egg, and vanilla extract in a large bowl. Mix until everything melds together beautifully.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl, ensuring no lumps remain.
- Gradually add the dry ingredients to the banana mixture, stirring just until combined. It’s okay if a few streaks of flour remain.
- Fold in the Nutella gently, creating swirls.
- Divide the batter among the muffin cups, filling each around two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
Notes
Muffins can be prepared in advance and refrigerated overnight. Best enjoyed warm.
