Description

Delicious and fluffy muffins made with ripe bananas and swirled with Nutella, perfect for breakfast or as a sweet treat.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup Nutella
  • 1/2 cup sugar
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the mashed bananas, sugar, vegetable oil, egg, and vanilla extract in a large bowl. Mix until everything melds together beautifully.
  3. Whisk together the flour, baking powder, baking soda, and salt in another bowl, ensuring no lumps remain.
  4. Gradually add the dry ingredients to the banana mixture, stirring just until combined. It’s okay if a few streaks of flour remain.
  5. Fold in the Nutella gently, creating swirls.
  6. Divide the batter among the muffin cups, filling each around two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.

Notes

Muffins can be prepared in advance and refrigerated overnight. Best enjoyed warm.
