Delicious and chewy Oatmeal Raisin Bars infused with honey and cinnamon, perfect for breakfast or as a snack.
Ingredients

- 1 cup rolled oats
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/4 cup honey or maple syrup
- 1/2 cup raisins
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup melted coconut oil or butter
- 1 egg (optional for binding)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the dry ingredients in a large mixing bowl.
- Whisk together the wet ingredients in a separate bowl.
- Mix the wet mixture into the dry ingredients until just combined.
- Fold in the raisins until evenly distributed.
- Spread the mixture in a greased or lined baking dish and bake for 20-25 minutes.
- Cool completely before slicing into squares.
Notes
Best served warm, can be stored in an airtight container in the fridge for up to a week.
