Description

A vibrant pasta salad featuring chewy orzo, creamy feta, and sweet sun-dried tomatoes, perfect for any casual gathering or picnic.


Ingredients

  • 1 cup orzo pasta
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta: Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions, usually around 8-10 minutes. Drain it in a colander and rinse it under cold water until cool.
  2. Combine ingredients: In a large mixing bowl, combine the cooled orzo, crumbled feta cheese, chopped sun-dried tomatoes, halved cherry tomatoes, finely chopped red onion, and the fresh basil.
  3. Make the dressing: In a smaller bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until smooth and emulsified.
  4. Dress the salad: Pour the dressing over the assembled salad and gently toss everything together until well combined.
  5. Serve: The salad can be enjoyed straight away or chilled in the refrigerator for an hour.

Notes

For a heartier dish, add grilled chicken or chickpeas. Be cautious not to overcook the orzo.
