- 1 cup orzo pasta
- 1/2 cup feta cheese, crumbled
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Cook the orzo pasta: Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions, usually around 8-10 minutes. Drain it in a colander and rinse it under cold water until cool.
- Combine ingredients: In a large mixing bowl, combine the cooled orzo, crumbled feta cheese, chopped sun-dried tomatoes, halved cherry tomatoes, finely chopped red onion, and the fresh basil.
- Make the dressing: In a smaller bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until smooth and emulsified.
- Dress the salad: Pour the dressing over the assembled salad and gently toss everything together until well combined.
- Serve: The salad can be enjoyed straight away or chilled in the refrigerator for an hour.
Notes
For a heartier dish, add grilled chicken or chickpeas. Be cautious not to overcook the orzo.
