- 1 can (20 oz) pineapple chunks in juice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Add the chopped onion and minced garlic, stirring frequently for 2-3 minutes until translucent.
- Incorporate the chicken pieces, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
- Toss in the chopped bell pepper and sauté for another 2-3 minutes.
- Stir in the rice, ensuring each grain is coated in chicken juices and oil.
- Pour in the pineapple chunks and juice along with the soy sauce, stirring gently to combine.
- Raise the heat to bring to a boil, then lower the heat, cover, and let simmer for about 20 minutes.
- Remove from heat and let sit covered for 5 minutes to meld flavors. Fluff the rice with a fork and garnish with green onions if desired.
