Description

A delightful blend of succulent chicken, fluffy jasmine rice, vibrant bell peppers, and sweet pineapple, all cooked together for a tropical treat.


Ingredients

  • 1 lb boneless chicken thighs or breasts
  • 1 cup jasmine rice
  • 1 can (20 oz) pineapple chunks in juice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add the chopped onion and minced garlic, stirring frequently for 2-3 minutes until translucent.
  3. Incorporate the chicken pieces, season with salt and pepper, and cook until golden brown, about 5-7 minutes.
  4. Toss in the chopped bell pepper and sauté for another 2-3 minutes.
  5. Stir in the rice, ensuring each grain is coated in chicken juices and oil.
  6. Pour in the pineapple chunks and juice along with the soy sauce, stirring gently to combine.
  7. Raise the heat to bring to a boil, then lower the heat, cover, and let simmer for about 20 minutes.
  8. Remove from heat and let sit covered for 5 minutes to meld flavors. Fluff the rice with a fork and garnish with green onions if desired.
