- 1 cup quinoa
- 1 pound chicken sausage, sliced
- 1 cup bell peppers, chopped
- 1 cup kale or spinach
- 1 avocado, sliced
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
Instructions
- Rinse the quinoa under cold water using a fine mesh strainer.
- Cook the rinsed quinoa with 2 cups of water in a medium pot; bring to a boil, then simmer for 15 minutes.
- Prepare the sausage by heating a sauté pan over medium heat, then cooking the sliced chicken sausage for about 6-8 minutes.
- Add chopped bell peppers and leafy greens; sauté for an additional 3-4 minutes.
- Assemble the bowl by fluffing the quinoa and dividing it among serving bowls. Top with chicken sausage and veggies.
- Finish with sliced avocado on top, and season with salt, pepper, and hot sauce if desired.
