Description

A delightful marriage of sweet and tart, these Raspberry Lemon Bars feature a buttery crust, creamy lemon filling, and juicy raspberries, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 cup raspberries (fresh or frozen)
  • Fresh fruit for topping
  • Powdered sugar for dusting
  • Whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the flour, butter, powdered sugar, and salt in a mixing bowl, mixing until crumbly.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  4. Bake the crust for 15 minutes.
  5. Whisk together the eggs, granulated sugar, lemon juice, and lemon zest until smooth.
  6. Fold in the raspberries carefully.
  7. Pour the filling over the warm crust.
  8. Bake for an additional 20-25 minutes or until set.
  9. Cool in the pan before cutting into squares.
  10. Garnish with fresh berries, powdered sugar, and whipped cream before serving.

Notes

These bars can be prepped a day in advance for better flavor. Store in an airtight container.
