- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1 cup raspberries (fresh or frozen)
- Fresh fruit for topping
- Powdered sugar for dusting
- Whipped cream for serving
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the flour, butter, powdered sugar, and salt in a mixing bowl, mixing until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake the crust for 15 minutes.
- Whisk together the eggs, granulated sugar, lemon juice, and lemon zest until smooth.
- Fold in the raspberries carefully.
- Pour the filling over the warm crust.
- Bake for an additional 20-25 minutes or until set.
- Cool in the pan before cutting into squares.
- Garnish with fresh berries, powdered sugar, and whipped cream before serving.
