- 4 medium sweet potatoes
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups crushed potato chips
Instructions
- Preheat the oven to 350°F (175°C).
- Peel and chop the sweet potatoes into even chunks.
- Boil the sweet potatoes in a large pot of water over medium-high heat until tender, approximately 15–20 minutes.
- Drain the sweet potatoes and transfer them to a mixing bowl.
- Mash the sweet potatoes until smooth and creamy.
- Combine melted butter, brown sugar, milk, vanilla extract, and salt in a separate bowl.
- Mix the wet ingredients into the mashed sweet potatoes.
- Transfer the mixture into a greased baking dish.
- Top generously with crushed potato chips.
- Bake for 25-30 minutes, or until the top is golden and crispy.
- Serve warm.
