Description

Delightful bite-sized squares of creamy cheesecake mixed with fresh strawberries, all wrapped in a buttery graham cracker crust and topped with a crunchy strawberry topping.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 package cream cheese, softened (8 oz)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (like Cool Whip)
  • 1 cup fresh strawberries, diced
  • 1/2 cup strawberry crunch topping (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter, stirring until well blended.
  3. Press the mixture into the bottom of an 8-inch baking dish.
  4. Bake for 10 minutes until golden, then allow it to cool completely.
  5. In a large mixing bowl, beat the softened cream cheese until smooth.
  6. Gradually add powdered sugar and vanilla extract, mixing until fully combined.
  7. Fold in whipped topping and diced strawberries until just combined.
  8. Spread the cheesecake mixture evenly over the cooled crust.
  9. Sprinkle the strawberry crunch topping generously over the cheesecake layer.
  10. Cover and chill in the refrigerator for at least 4 hours or preferably overnight.
  11. Once chilled, lift the cheesecake out of the dish using parchment paper and cut into squares before serving.
