Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs and melted butter, stirring until well blended.
- Press the mixture into the bottom of an 8-inch baking dish.
- Bake for 10 minutes until golden, then allow it to cool completely.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until fully combined.
- Fold in whipped topping and diced strawberries until just combined.
- Spread the cheesecake mixture evenly over the cooled crust.
- Sprinkle the strawberry crunch topping generously over the cheesecake layer.
- Cover and chill in the refrigerator for at least 4 hours or preferably overnight.
- Once chilled, lift the cheesecake out of the dish using parchment paper and cut into squares before serving.
