Description

A comforting Sweet Potato Casserole topped with toasted marshmallows, perfect for holiday gatherings.


Ingredients

  • 4 large sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans
  • 1/4 cup flour
  • 1/4 cup butter, melted (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot until tender, about 30 minutes.
  3. Peel and mash the sweet potatoes in a large mixing bowl.
  4. Mix in brown sugar, milk, melted butter, eggs, and vanilla extract until blended.
  5. Prepare your baking dish by greasing it and pouring in the sweet potato mixture.
  6. Prepare the topping by mixing pecans, flour, and melted butter in a separate bowl.
  7. Layer the pecan mixture on top of the sweet potatoes, then add mini marshmallows.
  8. Bake for 25-30 minutes until the marshmallows are golden brown.
  9. Serve warm and enjoy your comforting casserole!

Notes

Make-ahead tip: Prepare the sweet potato mixture a day in advance and refrigerate. Add toppings before baking.
