- 4 large sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
- 1/2 cup chopped pecans
- 1/4 cup flour
- 1/4 cup butter, melted (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot until tender, about 30 minutes.
- Peel and mash the sweet potatoes in a large mixing bowl.
- Mix in brown sugar, milk, melted butter, eggs, and vanilla extract until blended.
- Prepare your baking dish by greasing it and pouring in the sweet potato mixture.
- Prepare the topping by mixing pecans, flour, and melted butter in a separate bowl.
- Layer the pecan mixture on top of the sweet potatoes, then add mini marshmallows.
- Bake for 25-30 minutes until the marshmallows are golden brown.
- Serve warm and enjoy your comforting casserole!

Make-ahead tip: Prepare the sweet potato mixture a day in advance and refrigerate. Add toppings before baking.
