Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup vodka sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for frying
  • 4 slices of bread (Italian or ciabatta)
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Flatten the chicken by gently pounding it to an even thickness.
  2. Season both sides of the chicken with salt, pepper, and Italian seasoning.
  3. Set up the breading station with separate bowls for flour, beaten eggs, and breadcrumbs.
  4. Coat each chicken breast in flour, then egg, and finally breadcrumbs, pressing lightly.
  5. Heat olive oil in a skillet to about half an inch deep over medium heat.
  6. Fry the chicken for 5-7 minutes per side until golden brown and cooked through.
  7. Warm the vodka sauce in a saucepan over low heat.
  8. Toast the bread slices lightly, then assemble the sandwiches with fried chicken, vodka sauce, and mozzarella cheese.
  9. Cover and let the cheese melt slightly, then garnish with fresh basil and serve.
